I love this recipe. It's so simple, with only 4 ingredients (ok, 5 if you want to be fancy about it), and made with all natural stuff. It's perfect to make for friends, kids, or just to enjoy yourself with a cup of chai.
I N G R E D I E N T S :
For one loaf.
10 medjool dates, softened, pitted and chopped
3 - 4 very ripe bananas , peeled and quartered
3 tablespoons of raw cacao or good quality cocoa
500g ground almonds
The 5th ingredients, if you like, would be to add roughly chopped brazil nuts to the mix for a bit of crunch.
M E T H O D :
Preheat the over to 150 degree C
Grease and then line a standard sized loaf tin with baking paper.
Put all the ingredients in a foods processor, in batches if necessary to make sure it all blends well, and blend at a high speed until the mixture is smooth and very well combined. Mix in the chopped brazils at the end if you like.
Spoon the mixture into the prepared loaf tin, smooth over the top with the back of a spoon.
Bake in the oven for one hour.
Remove from the oven and cool in the tin for 30 minutes before gently transferring to a cooling rack.
Voila! Beautiful homemade banana bread. This is delicious served warm, and the longer it cools the more set in the centre it will become, but it still stays yummy and soft for a couple of days after baking...if it lasts that long ;)
